Tested the Quickstart package: Menu category show articles is working fine (see file enclosed ShoppyStore_VM3-0-16 xxxxx) works OK
On another test site, using standard Joomla 3.6 + template ShoppyStore + all plugins and modules + VM 3.0.18 : Category to show article not working fine : see file enclosed (ShoppyStore_VM3-0-18 xxxxx )
Think this is due to a change in new VM version

Currently, SJ Shoppystore does not support VM 3.0.18. We are updating this template to be compatible with the latest version of VM. I will inform to you as soon as possible.

last question : Do you feel I can install the actual version of the template + VM 3.0.16 on a live site,.; And once the template will be released, I will upgrade both the template + .VM to 3.0.18 ...without a big risk to loose all datas ?

Yes, you can revert Virtuemart to version 3.0.16 without losing data.
